Since first opening its doors at the end of March 2025, Hay St Market at Paddy\u2019s has seen a large number of locals and tourists flock to this exciting new destination, which is expected to increase tourism to the City of Sydney and to Sydney\u2019s Haymarket.\u00a0<\/p>\n<p>The Hay St Market concept was created by Doltone Hospitality Group following multiple years of research into the world\u2019s best markets and taking inspiration from some of the most renowned globally including Borough Market in London, Lau Pau Sat in Singapore, the bustling food markets in Barcelona and Chelsea Market in New York City.\u00a0<\/p>\n<p>Prime Minister Anthony Albanese acknowledged the significance of the project, stating: \u201cHay St Market enhances a corner of Sydney that is already home to Market City and the iconic landmark that is Paddy\u2019s Market.
